Yes, you read that right...TWO INGREDIENT Banana Coconut Cookies!!! I found this recipe over on Instagram and the blogger that posted it saw it on Pinterest...so I am not sure where it actually originated and who I have to thank for the recipe, but it is a new family favorite so I wanted to share it with you.
3/4 cup shredded coconut
Blend the banana and shredded coconut together in a food processor or blender. Place cookie sized scoops on a parchment paper lined baking sheet and place in the oven at 325 degrees for about 25 minutes. That's it and they are so so good. Like little coco-nutty banana bread macaroons. And wow to being gluten-free, dairy-free, refined sugar-free, etc etc! Enjoy!!!
