Around here we drink a lot of wonderful, gut healing bone broth. My youngest daughter developed severe eczema around four months old and the last year has led us on even a greater food journey. I have learned that many people are suffering from Leaky Gut and don't even realize it. It can cause inflammation throughout the body and symptoms such as bloating, food sensitivities, thyroid conditions, fatigue, joint pain, headaches, skin issues, digestive problems, weight gain, etc. For my daughter, The GAPS Diet has made all the difference in her healing process, so it is something I believe in and something that I can't help myself from mentioning often...so get used to it, folks.
Not only am I working to repair her gut, I want to keep the whole family's system in working order. I add bone broth to everything I can or pass out a mug full of it on occasion. Gummy Snacks made with gelatin are another wonderful, gut healing option, especially for kids. For my youngest, I make hers simply with water, blueberries, and gelatin, but my older girls love this recipe...
1 cup blueberries, rasberries, or whatever fruit you choose
4 tablespoons beef gelatin ( I like Bernard Jensen's)
2/3 cup water or coconut water (I like C2O)
1 tablespoon honey (optional)
Place coconut water and fruit into a sauce pan and heat until berries are softened. Blueberries look like they want to burst.
Place water/ fruit mixture into a blender and blend until smooth. Add in the gelatin and give it another spin to combine well. Pour mixture into a glass baking dish or candy molds and refrigerate for at least 30 minutes.
