Summer Squash Sliders


Squash here, squash there, SQUASH EVERYWHERE. I have an overabundance of squash coming out of my garden and I intend you use them up. The other day I made a super tasty Summer Squash with Sage Butter and Sausage and this weekend I made Summer Squash Sliders. They were yummy.


Ingredients:
1 cup shredded summer squash
1/2 cup quinoa
1/2 cup mashed garbanzo beans
1/2 cup shredded cheese
1 tablespoon white onion
1 tablespoon green onion
1 tablespoon fennel or other fresh herb
1 teaspoon olive oil
1 teaspoon dijon mustard
salt and pepper to taste


First cook the quinoa according to the package directions. It is normally cooked in the ratio of 1 cup quinoa to 2 cups water, like rice. Mash garbanzo beans. I used an immersion blender. Then shred squash and cheese with a cheese grader and chop onions and herbs. Mix together with the remaining ingredients to form mini burgers. Next pop the molded burgers into the freezer for at least an hour to make them solid and easier to flip. You can also make them in advance and keep them in the freezer until you need them. When ready to eat, cook burgers straight out of the freezer, flipping until cooked through and browned on each side.


Serve with your favorite condiments and toppings and Enjoy.
