Chocolate Chip Oat Deliciousness

I have made a bunch of little 'two bite' size treats for my girls in the past. I believe that the size of most treats or anything sweet is just too large. I don't think they need a huge granola bar or cookie. They get bombarded with enough "treats" at school. At home, I like it to feel special. They really love our Cranberry Almond Deliciousness and our Pineapple Macadamia Nut Deliciousness. Following that tradition I had to name these Chocolate Chip Oat Deliciousness.

12 pitted dates
1/3 cup unsweetened almond butter (or peanut if you prefer)
Chocolate chips
Maple syrup (optional)
Nuts, raisins, dried fruit (optional)

This sweet treat is easy...and I love easy. Preheat oven to 350 degrees and lay oats out on a baking sheet and toast for about 15 minutes while you take the seeds out of the dates. (You can skip this step and just toss in raw oats if you prefer). Toss pitted dates into a high powered blender, such as the Vitamix. Blend until nicely chopped. Then add the nut butter and blend until creamy and mixed well. If you like things even sweeter, add a splash of maple syrup here. Remove sticky mixture and press into oats and mini chocolate chips until they are nicely mixed and then form into balls. Sometimes I like to hide dried fruit in the middle. Almonds are really good in this recipe as well.

Next wrap or put in something (I used parchment paper) and stick in your freezer for about 20 minutes to harden. They can be stored in a container in the refrigerator after. Makes about 10-12. Ours are already gone!
