Fingerling Potatoes with Rosemary & Kalamata Olives


This easy side dish is healthy and almost effortless, but packed with flavor. 

Ingredients:
Fingerling Potatoes
Jar of Kalamata Olives
Olive Oil
Rosemary


First cut the potatoes to roughly the same size so they cook evenly. 


Then mix together olive oil with a bit of the juice from the jar of Kalamata Olives. The juice consists of olive, water, red wine vinegar, and sea salt. I like Organic Divina's Kalamata Olives  


Mince rosemary and...


Toss rosemary and olive oil mixture together with cut potatoes and sliced Kalamata Olives.
Bake at 350 degrees F for 15-20 or until tender.


SUPER easy and looks a bit fancy. We love it. Hope you enjoy!
