I love mayonnaise. It's ridiculous, but I think it may be one of my favorite things. Unfortunately most mayos, no matter how organic or made with eggs from cage-free happy chickens they are, most are still made with canola or soy oil. Unfortunately again, homemade mayonnaise just doesn't do it for me...but I won't give it up. I just won't. I will however give it up for this potato salad. Mayo is just not necessary. It is creamy and flavorful without it.
Salt & Pepper
I am not including measurements because honestly I think you are all smarter than that. You boil the potatoes, cut them up, add diced celery, onion, and dill. Then mix in olive oil and dijon mustard. It is also a taste preference. Some people prefer more oil, some more mustard. I like just a dab of mustard. Lastly salt and pepper to taste and chill a bit before serving. It's not rocket science but I am sharing because leaving out the mayo and using a dressing of olive oil and dijon might not have been something you thought of...and it is so so good you won't even miss the mayo.
