Homemade Flour Tortillas

The other day in an effort to skip dinner in a can, I took the time to soak beans and make my own bean and cheese burritos with "refried" beans. After dinner I realized that to truly say I made that meal from scratch I would need to learn to make my own flour I did.

2 cups flour
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil

It was easy, fun, and the kids even joined in. We may never go back to store bought tortillas again.

First, combine the flour and salt in a large bowl. Stir in water and oil.

Remove from the bowl and place on a floured surface and knead 10-12 times, adding a little more water if it doesn't seem to keep together well. Let stand for 10 minutes.

Divide dough into eight portions.

On a lightly floured surface, roll each of the eight into a circle. My girlies joined in here.

Dusting the rolling pin with flour prevents sticking. 

In a lightly oiled pan, cook tortillas on medium heat for one minute on each side or until lightly browned.

We made some little quesadillas to test out the yumminess of our new found skill, but I bet they are going to be awesome the next time we make our bean and cheese burritos. Enjoy!
