Burritos with Homemade "Refried" Beans & Salsa Fresca

A favorite weeknight meal at our house = bean and cheese burritos topped with salsa fresca. It is easy and fast and everyone loves it because they get to build their own. Up until recently I used an organic brand of black refried beans for our filling. It has been on my 'to do list' to try making my own homemade beans. I have been consciously trying to purchase less food in cans because of BPA. Beans were one of the last I did still buy because I didn't realize how easy it is to make your own. It just takes a little planning.

Beans sold in a bag or bin at the grocery store come hard and there is minor preparation involved. Yes, it is easier to open a can and pop it's contents in the microwave or heat on the stove top...but where would the fun in that be!?! Yes, we are all pressed for time, but this is seriously easy and avoiding microwaves and canned goods when possible is a good thing. Plus I have a desire to know how to cook my favorite foods from scratch and as natural and healthy as possible...so here you have my No Refry "Refried Beans".

As long as you remember to throw your beans in some water the night before you plan to eat them, this is simple. What You'll Need for the Meal: 16 oz bag of beans, water or chicken broth, flour tortillas, tomatoes, red onion, cilantro, shredded cheese, and sour cream (optional topping). 

First soak the beans overnight. Then drain.

Add the beans to a pot. Fill with water or chicken broth until covered. I used chicken broth. I have been making a huge pot of bone broth every week and add it to just about everything. It's full of good healthy stuff. Once water or broth is boiling turn down heat and simmer for about 20 minutes or until beans are soft.

While the beans are cooking prepare the Salsa Fresca by chopping and mixing together tomatoes, onions, and cilantro.

When the beans are tender drain the liquid...

and add to a blender or food processor at little at a time. 
Pour in small amounts of water or chicken broth until you reach a smooth consistency. 
You can also add any spices or additions you like here. 
Onion, paprika, chili powder, or garlic are tasty choices.


Warm the flour tortilla and fill with homemade 'refried beans' and cheese and fold.
Top with Salsa Fresca and sour cream. Enjoy!

I just realized I need to learn to make my own flour tortillas!!! Will do that soon. XO
