1 large bag of corn chips- please choose organic and non-gmo.
1 whole chicken- I picked up a cooked chicken from the store
1-2 bottles, cans, or packets of enchilada sauce
1 block cheese- we used a Colby Jack, Chedder mix
We had a bunch of chips leftover from a party that were about to go stale. This is a great way to use them up. Start with a layer of chips, then cheese, shredded chicken, and finally sauce and layer like you would a lasagna. You should end up with two layers and then top that with cheese.
This is a very kid friendly recipe and my daughters enjoyed helping.
It is also a great dish that can be put together ahead of time and left in the refrigerator until ready to bake.
