Easiest Chicken Enchilada Recipe EVER

Prepare yourself for the Easiest Chicken Enchilada Recipe EVER! This recipe is quick, easy, and can feed many.

1 large bag of corn chips- please choose organic and non-gmo.
1 whole chicken- I picked up a cooked chicken from the store
1-2 bottles, cans, or packets of enchilada sauce
1 block cheese- we used a Colby Jack, Chedder mix
Sour Cream

We had a bunch of chips leftover from a party that were about to go stale. This is a great way to use them up. Start with a layer of chips, then cheese, shredded chicken, and finally sauce and layer like you would a lasagna. You should end up with two layers and then top that with cheese. 

This is a very kid friendly recipe and my daughters enjoyed helping.

It is also a great dish that can be put together ahead of time and left in the refrigerator until ready to bake. 

When ready to eat, pop in the oven at 350 degrees. Baking time is only about 15 minutes. It is ready when cheese is nice and bubbly. Top with sour cream, avocado, and cilantro or whatever you like. Enjoy!
