Today turns out to be a certain teddy bear's birthday and we needed a sweet treat FAST. I worked with what I had handy and these Chocolate Almond Butter Treats turned out delicious.
Meet Duffy. Today is his birthday and celebrate we shall.
1 cup unsweetened almond butter
3-4 rice cakes
1/4 cup brown sugar (optional)
favorite chocolate to melt
coconut oil to grease mini muffin pan
Crumble up rice cakes and then mix with almond butter and sugar. Use the coconut oil to lightly grease mini muffin tin.
Press mixture into the bottoms, about half way full, and press down. Freeze for about 30 minutes.
Next melt the chocolate on the stove-top (while I did this the girls made him cards) and then top your chilled mixture with chocolate. Pop into the refrigerator until chocolate is firm.
