Today my daughters and I made a Sunday Brunch featuring mini quiches. They are super easy and fun to make.
6-12 slices of bread (depending on how well you or the kids cut the circles)- or go gluten and grain free and instead of bread try bacon!!
Shredded cheese of your choice, Swiss or cheddar are good
1/2 cup water (or milk)
1 teaspoon mustard
Salt and pepper
Preheat oven to 375. Grease a muffin pan. Cut bread into circles that will fit in bottom of each spot. You may be able to get two circles out of one slice. Save the rest of the bread for making breadcrumbs. Place circles in the bottom of each muffin tin.
Then split up onion and cheese between the twelve muffin tins and pour in the combination of eggs, water, mustard, salt, and pepper. Top each with a tomato slice.
