Collard Wrap

I am not exclusively Vegan or Raw or Gluten-Free or Vegetarian or Carnivore...I like to dabble. I like to be all things. I mix it up. I think this is a good way to be. Helps me stick to the "everything in moderation" motto.

Some days I find my body wanting only the crisp crunch of raw veggies. I think my body knows what it is lacking. My favorite raw, vegan snack is a collard wrap. It is super easy to make and very tasty.

For wrapping: Collard or Kale leaf
For the filling: cashews, sun dried tomatoes, lemon juice, ginger, tamari, sea salt, red pepper flakes
To top it off: cabbage, lettuce, mango or peach for something sweet, etc.

Start with the filling...blend together cashews, sun dried tomatoes, a little lemon juice, ginger, tamari, sea salt, and red pepper flakes into a spicy paste. If you have never heard of tamari, it is like soy sauce, but while soy sauce is made with 50% soybeans and 50% wheat, tamari is made from 100% soybeans and no wheat. It is gluten-free. When I can cut out gluten and something still tastes awesome, I go for it. You can use soy sauce, this just happens to be what I have in the fridge. Just make sure whatever you use is organic. No body wants GMO soybeans in their nice healthy collard wrap.

Next spoon the paste filling into your collard leaf and add toppings. This time I went for cabbage and mango. I really like the sweet with the spicy. You can top with peach, lettuce, a cucumber strip-- anything for a little added crunch and texture. Enjoy! Hope you like it.
