Squash Fries

Anything made to resemble a french fry automatically tastes better! In this case though no matter what the shape, this squash recipe is tasty!

I have been struggling with the huge amount of squash that has been coming out of our garden. We have Scalloped White Squash and Goldbar Squash...and lots of it! Unfortunately no one in the family seemed real keen on it. I have been cooking it up with a little garlic and olive oil and adding it to our dinners only to see it still sitting on the plate when the meal is over. I knew I had to get creative. For my little one, eating squash was no longer a topic up for discussion. It just wasn't going to happen. Until Squash Fries!!!

Peel and cut squash or zucchini into sticks and then do a three stage breading: 1)flour 2) egg 3) bread crumbs

For the bread crumbs: Mix bread crumbs with a little garlic, grated Parmesan cheese, and salt and pepper. 

Lay the breaded squash out on a baking sheet and bake at 350 for twenty minutes or so. Serve with a dipping sauce like Ranch. We like Field Day Organic Ranch Dressing. It is the best tasting natural ranch I have found. Enjoy!
