Squash Cookies


I am still trying to find creative ways to use up all of my summer squash. This morning I tried Squash Cookies and surprisingly they are wonderful.

1 egg, beaten
1/2 cup butter, softened
1/2 cup brown sugar
1/3 cup honey
1 tbsp. vanilla extract
Combine these in a large bowl

2 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Combine in a separate bowl and then blend into liquid mixture

1 cup shredded summer squash (or zucchini)
12 oz. chocolate chips or 1 crushed up chocolate bar

Stir these into other ingredients and mix well. Drop by spoonful onto greased baking sheet and flatten with the back of a spoon. Bake at 350 for 10-15 minutes. Enjoy!
